A Public Health Opportunity Found in Food Waste

The figure depicts the framework of the Brighter Bites program by showing how the 3 levels of food waste (ie, production, retail, and household) are changed by the program. Food waste at the production level is improved by aggregating and distributing produce donated by food producers (eg, farmers, growers). Food waste at the retail level is improved by aggregating and distributing produce donated by food retailers (eg, grocery stores). Food waste at the household level is improved by providing healthy recipe tasting, nutrition education in schools (eg, CATCH), and parent nutrition education. All of these potential improvements by the Brighter Bites program can result in reduced food waste overall.
